My wife and I had been to Le Doyen a couple of times some years ago before Alleno took over after his very successful tenure at the Hotel Meurice starred restaurant. Even for those high standards Paris has as the capital of fine dining Yannick Alleno's new way of defining French fine dining cuisine of today is exceptional and stands out! My American wife and I ( Continetal European) decided to pay a visit to Yannick Alleno's establishment for a special dinner with my elderly mother on our latest visit to Paris. There were few amuse, one was literally small cubes of pumpkin, nothing interesting, nothing with any wow factor. We left wondering how such a fine dining experience was only judged as a two star Michelin restaurant. THE GIFT BOXES OF THE PAVILLON LEDOYEN FOR EPICUREANS. With the reasonably broad and deep experience which I have in restaurants across Europe, the US ( respectfully, not such a great reference point) and to a lesser extent Asia, I can categorically say the the service at Le Doyen is absolutely Top Notch.
Every detail is thought of to ensure that the meal is memorable.
Unfortunately, Yannick seems to be a a marketing feature for this tired old establishment, which quite frankly, has seen better days. We would recommend this to anyone including William and Kate - A meal for Royalty. $500AUD/head to get the goods??? There is no comparison between Le Doyen then and what it is now. I really enjoyed one of the starters, Clerie rave en papilotte. Each dish was presented with style imagination and flare, in parallel so to was the wine.
As a minor caveat I would mention that the downstairs entrance and decor needs some refreshing. The wine list does not compliment the food as well as you would expect in Paris but that is a small issue. I found the overall experience very good and would recomend you give it a try. What a disgrace! He paid special attention (as did every other member of staff) to my elderly and very modest mother who was quite overwhelmed by the food, venue, experience and atmosphere. All seasoned to the finer things in life, Manager Frederic Pedrono and his staff exceeded our expectation for not just the obvious fine dinning, but the almost military precision of his staff. We enjoyed the "Three Star" tasting menu, which included about 11 courses. You will do this once or twice in a lifetime if you are lucky. The "3 star Michelin" menu was about 300 euros/head. The delight of a true "Grand Table" is that at lunchtime, you can have magnificent, 3 Michelin star food at a fraction of the price, in magnificent surrounds, served by highly trained waitstaff-in short, the whole Michelin experience. A very different approach to to fine dining so don't hesitate to ask the service team for explanation to get a better understanding of its philosophy as I did. Service was very good and the wine list was impressive, though not a bargain (unlike, say, Taillevent). An interesting variant, you choose your main course and then the Maitre d' proposes two starters to go with it. Amongst the nice touches were lots of different types/shapes of break rolls and the mini desserts they give you with the coffee. In some ways it was inspired and inventive.
The food continued in this vain throughout. I stayed away from expensive wines ( 105 euros for a 2012 Crozes-Hermitage is "all" I cared to spend) but a glass of champagne to start and dessert plus coffee will , in itself ( before factoring in starter and main course) easily set you back 80 euros a head. Yannick Alleno greeted us on the way in, visited our table twice during the evening, personally delivering a specially prepared in-between dish. Under the direction of Yannick Alleno (who chatted with us as we drank Champagne in the bar, prior to dinner) it is quite impressive. Those reviewers who , at least of late, may have experienced something different must have felt very uncomfortable with the cooking itself or the undoubtedly gallic accent sported by all members of staff when speaking English. Although I regret that these reviewers were unable to enjoy the experience to the full, I would contend that they are in part responsible for it.
